Oklahoma Department of Agriculture, Food, and Forestry

The Oklahoma Department of Agriculture, Food, and Forestry, (ODAFF) Food Safety Division enforces federal and state laws and rules relating to the production of food and food products that are derived from animals to ensure that the food supply derived from meat, poultry, eggs, and milk is safe. ODAFF also regulates animal feed.  The entry level classification utilized by ODAFF is:

Annual Salary Range: 
Level I: $27,827 – $51,017
Level II: $30,593 – $56,088
Level III: $33,440 – $61,307
Level IV: $36,784 – $67,437
Level V: $40,829 – $74,853

Minimum Qualifications: Bachelor’s degree in an agricultural, biological, plant, animal, physical or natural science, food technology, or a closely related field; or an equivalent combination of education and experience; or possession of the appropriate USDA license prescribed by the contract creating the position.

Oklahoma State Department of Health

The Oklahoma State Department of Health’s (OSDH) manufactured food program inspects establishments engaged in the manufacturing, warehousing, and wholesaling of food products and ingredients, production and distribution of bottled water, and the vending of water and ice.  The food/retail program includes a wide range of establishments; all sell food directly to the public.  The entry level classification utilized by OSDH is:

Public Health Specialist I, II or III
Annual Salary Range: 
Level I – up to $52,000
Level II – up to $59,300
Level III – up to $63,800

Minimum Qualifications: Bachelor’s degree with a major in public health, environmental health, environmental science, physical science, natural science, biological science, agricultural science, or equivalent, from an accredited college or university with at least thirty (30) semester hours of work in physical, natural and biological science, public health and/or environmental health or environmental protection or both environmental health and environmental protection.

Knowledge, Skills, and Abilities required at this level include knowledge of the causes, impact, and prevention of public health problems in regulated establishments; of food microbiology as it applies to preventing food borne illness; of basic epidemiology and chemistry; of mathematical concepts including basic statistical analysis; of food processing techniques such as modified atmospheric packaging; and of rules and regulations governing food establishments; and of public bathing places, nursing homes, schools, day care facilities or other licensed establishments. Ability is required to conduct inspections and investigations of regulated facilities; to identify the causes of food borne illnesses and related health hazards; to analyze and evaluate environmental and sanitary conditions; to organize work and work independently; to communicate effectively, both orally and in writing; and to use computers to organize data and generate reports.
